Meat Ball Stroganoff recipe

This recipe originally called for ground chuck, but I substitute ground turkey. It is cheaper and lower in fat and you really can't taste the difference.

This recipe makes 6 to 8 servings.

MEAT BALL STROGANOFF

1 1/2 pounds ground turkey
3/4 cup minced onions
3/4 cup milk
8 ounces sliced mushrooms
3/4 cup dried bread crumbs or oatmeal
3/4 teaspoon paprika
1 1/2 + 3/4 teaspoon salt
2 tablesppons flour
1/4 + 1/8 teaspoon pepper
1 can beef bouillion, undiluted
3 tablespoons snipped parsley
1/2 teaspoons worcestershire sauce
1/2 stick butter or margaine
1/2 cup sour cream
hot cooked rice
 

MEAT BALL STROGANOFF DIRECTIONS

With fork, mix ground turkey, milk, bread crumbs or oatmeal, 1 1/2 teaspoons salt, 1/4 teaspoon pepper and parsley. Shape into 1 1/4 inch balls.

Saute the meat balls in 2 tablespoons butter, in skillet, until browned. Remove from stove and set aside.

Add 2 tablespoons more butter to skillet, add onions,mushrooms, paprika. Stir until the onions and mushrooms are tender, about 5 minutes.

Sprinkle flour over mushroom mix, stir. Then, while stirring, add beef bouillon, 3/4 teaspoon salt, 1/8 teaspoon pepper. Return meat balls to sauce. Cover and simmer for 10 minutes.

Stir in worcestershire sauce and sour cream. heat. Serve over hot cooked rice.
