Mediterranean food is becoming more popular as a health diet.

Since the the mid 1990s, a lot of research has, and is still being done on the health benefits of the Mediterranean diet. Researchers have discovered that there is an exceptionally low death rate from heart diseases, in Mediterranean countries that follow the Mediterranean diet. Not all Mediterranean countries follow this healthy diet, but the ones that do, show a significant reduction in coronary related illnesses. This trend of having a healthy heart is due to the foods that they eat, and their active lifestyle.

The health benefits of following a Mediterranean diet are numerous, lower risk of getting diabetes, reduced risk of coronary related ailments, a healthier BMI ( Body Mass Index ), a reduced chance of suffering from Alzheimer.

The low saturated fat and high fiber, high monounsaturated fat in the diet, seem to afford the locals a significantly healthier life. Although the Mediterranean diet is a major contributing factor, the active lifestyle of the people has to be noted.

Researchers have found that in Mediterranean cooking, olive oil is the principle source of fat, and a lot of whole fresh fruits and vegetables are consumed. Beans, yogurt, nuts are eaten often, and red wine is consumed in moderation. Poultry, fish and eggs are also eaten in moderation and red meats is rarely consumed.

  • 1 Chicken, Whole
  • 1 Liter Chicken Stock
  • Half a cup Pitted Green Olives, Whole
  • Half a cup Pitted Black Olives, Whole
  • 30 grams Ginger, Julienne
  • 2 Onions, Sliced
  • 2 Large Tomato, Cut to 4
  • Half Lemon, Juice
  • Splash Olive Oil
  • Quarter tsp Turmeric, Powder
  • To taste Salt
  • To Taste Pepper, Crushed

Method

  1. Rub some salt on the chicken and put the chicken in a deep baking tray, breast up, sprinkle some olive oil on the chicken.
  2. Pour chicken stock in beside the chicken, add onions, tomato,ginger,black olives,green olives , turmeric powder and a little pepper to the stock
  3. Pour in the lemon juice.
  4. Bake at 220 degrees for one hour, or until the chicken tunes golden brown.
  5. Serve with steamed white rice, for extra freshness, garnish with fresh coriander.
