Menudo
Making Mexican menudo
Ingredients
- 2 pounds ( 910 g) Tripe
- 1 bunch w/ tops Green onions, Chopped
- 3 Garlic cloves, Minced
- 3/4 cup (10 g) Cilantro Leaves, Snipped, divided
- 1 Lime, Slices
Instructions
- Wash tripe very well and dry with paper towels. Place tripe in soup pot with enough water to cover plus three inches (8cm)
- Add onions and garlic, bring to boil, reduce heat and simmer for 6 to 8 hours until tripe is tender. Add water if necessary.
- When tripe is tender, remove from pot and cool for about 15 minutes. Cut into small pieces and return to soup pot.
- Add 1/4 cup (5 g) cilantro and cook for an additional 1 to 2 hours. Serve in large soup bowls and garnish with cilantro and lime slices.

Menudo
Menudo or tripe soup is a favorite in Mexico. Trip is the inner lining of beef stomach, it is very tough, and requires long cooking times. Many will tell you this delicious beefy bowl is worth it. Menudo also known as, Mexican hangover helper, is reported to be a sure cure for the morning after a long drinking night. A great hangover helper!
