How to Make a Really Good Mexican Macaroni and Cheese Casserole Bake
My Kids Really Dig It
My wife found this recipe for a Mexican macaroni bake on a shells and cheese box a few years ago. My kids really like it. It takes about 45 minutes counting the prep and bake time.
Ingredients Needed:
1 box Velveeta shells and cheese
1 lb. ground beef
8 oz. shredded cheddar (or other desirable type) cheese
Salsa or 8 oz. can of tomato sauce
Tortilla chips
1 pack taco seasoning
Directions: heat oven to 350. Cook macaroni according to specs, while browning ground beef. Add taco seasoning to browned ground beef. Pour completed mac and cheese into casserole dish. Cover with ground beef. Sprinkle 1/2 of the shredded cheese over ground beef. Cover with foil and cook for 20 minutes. After cooking for 20 minutes, remove from oven. Cover cooked casserole with the salsa or tomato sauce (my kids like the tomato sauce, but my wife prefers the salsa). Crush enough tortilla chips to cover casserole and then place the other 1/2 of the cheddar cheese on top. Cook uncovered for 5 additional minutes to melt the cheese. This will feed a family of four. We usually have some leftovers. I have no idea how many calories this has, but I'm sure it's quite a few. It's a tasty meal regardless.
