Moroccan Tea , there are many different kinds , but this is mostly what we use and I took some out and put it on a plate so you can see what it is.

Yields: serves 4 people

Ingredients

  • 1lb GROUND BEEF
  • 1/2 CUP RED ONIONS
  • 1/3 CUP CILANTRO
  • 1/2 TEASPOON SALT
  • 1/2 TEASPOON PEPPER
  • 1/2 CUP WHITE ONION
  • 3 CLOVES FRESH GARLIC
  • 1 POUND CAN CRUSHED TOMATO
  • 1/3 CUP PARSELY
  • 1TBSP SALT
  • 1/2 TBSP PEPPER
  • 1 TBSP SUGAR
  • 1 TBSP GARLIC POWDER
  • 6 EGGS
  • 1/2 tsp paprika PARMESIAN CHEESE
  • SOFT FRESH PITA BREAD, OR ITALIAN BREAD
  • 1 TBSP DRY GREEN TEA
  • 5 TEASPOONS SUGAR
  • A FEW LEAVES MINT LEAVES

First things first

  1. First we are going to get our tomato sauce going so cut up the onions and garlic in the bottom part of the recipe ingredients. put a little veggie oil on bottom of pan and let it get hot. Put the onions and garlic in the hot oil and sauté'. after they are clear add tomato sauce and stir in until it is lightly simmering. Add parsley and salt, pepper, sugar, and stir. Let it lightly simmer. While it is simmering you could start getting the kufta ready.
  2. For the kufta, you , blend the meat, cilantro, salt and pepper and paprika. start by rolling 1/2 inch balls and laying them out on a plate because they have to go into the sauce all at the same time. They won't take that long to cook, maybe about three minutes or so. Place them in and around the pan cover them with the sauce. Wait about 2 minutes then you start breaking the eggs very carefully right into the sauce, placing them all around the pan. Once they are in sprinkle salt and pepper on top of them. Let it all simmer for about 3 minutes more and then take it off the heat. I usually like to put the whole pan in the middle of the table.
  3. The key to enjoying this dish in it's entirety is having the table set nice, with some pita bread. You can also put a little dish of black olives on the side and if you like offer salad if there are a lot of people. You can double recipe or triple, whatever you like.
