Mug Cake-The Perfect Dessert For One

Picture it. There you are sitting, minding your own business, watching TV, when all of the sudden it happens. The snack attack. You wander around your kitchen looking for something that will appease the snack attack monster. Nothing you see will do.

You could bake a cake, but, there is only you. Think of the waste. You'd end up throwing away half of it. Or even worse, you'd end up eating it all yourself and add those ugly pounds to your hips. What's a person to do.

The answer is simple. Make a mug cake. What's a mug cake? It's a cake you bake or microwave in a mug. It's the perfect size for someone who lives alone and just can't do without that snack. I takes a matter of minutes to put together and cook, especially when you use the microwave. Mug cakes give you the satisfaction of having a home baked snack without all of the waste or temptation of eating too much.

Make sure you add those little touches after the cake is cooked. You know what I mean, the whipped cream, the sprinkles, maybe a strawberry or some chocolate chips. The sky's the limit. Make it your own.

Ginger Spice Latte Mug Cake

Ingredients:

2 tbsp strong brewed coffee

1/4 tsp ground ginger

1/4 tsp cinnamon

1 tbsp molasses

4 1/2 tsp sugar

1 egg

3 tbsp oil

3 tbsp fat free milk

5 1/2 tbsp flour

1/8 tsp baking powder


Directions:

Combine all ingredients into over-sized mug.

Stir with a small whisk or fork until batter is smooth.

Microwave for 1 1/2 minutes.

If cake is not done, microwave for an additional 30 seconds.

Serve while warm. Top with whipped cream if desired.

Serves 1.


Pineapple Upside Down Mug Cake

Ingredients:

1/3 cup flour

3/4 tsp baking powder

3 tbsp of sugar

1 tbsp shredded coconut

4 oz can of crushed pineapple

2 1/2 tbsp shortening

1 egg

3 tbsp milk

1/2 tsp vanilla

1/2 tbsp melted butter

1 tbsp brown sugar

4 maraschino cherries

Instructions:

Preheat oven to 350 degrees.

In a small bowl mix together all of the dry ingredients.

Mix in shortening.

Add egg, milk, and vanilla mixing well.

Transfer mixture into a 12 oz or larger mug.

Sprinkle melted butter and brown sugar over bottom of mug.

Place the cherries and the drained pineapple on top of butter and brown sugar.

Pour the cake batter into mug over pineapple.

Bake for 15-20 minutes.

Serves 1.

Caramel Mug Cake

Ingredients:

4 tbsp flour

4 tbsp sugar

3 tbsp unsweetened cocoa powder

1/4 tsp baking powder

1/4 tsp salt

1 egg, beaten

3 tbsp low fat milk

1 tbsp canola oil

2 caramels

Directions:

Into a small bowl mix together: flour, sugar, cocoa, baking powder, salt, egg, milk, and canola oil.

Pour mixture into a 12 oz or larger mug.

Drop caramels into center of mixture one at a time.

Microwave on high for one minute and 30 seconds.

If cake is still gooey, microwave on high for up to an additional 30 seconds.

Serves 1.
