Elbow Macaroni and Fresh Vegetables!
Hi again! Just made my homemade macaroni salad for our weekly get together at my Mother-in-law's house tonight and thought I'd share the recipe with you. Word is that we are having boiled crawfish tonight and I put my thinking cap on to come up with another side dish to go along with them. We will already have the crawfish of course, boiled along with some smoked sausages, corn on the cob and new potatoes! What could be better than a cold macaroni salad to accompany this messy but very elegant meal? While my salad chills in the fridge for awhile I'll show you how to make this wonderful salad. Let's get started!
Macaroni Salad
4 cups elbow macaroni, uncooked
3 green onions, chopped
1/3 large purple onion, chopped
2 ribs celery, chopped
1 large Roma tomato, deseeded and chopped
1 large dill pickle, chopped
1 to 1 1/12 cup mayonnaise
1/4 cup distilled white vinegar
2 tbls. mustard
2 tbls. sugar
1 1/2 tsp. salt
1 tsp. black pepper
Boil macaroni according to package directions. Drain and rinse macaroni with cold water. Allow macaroni to continue draining while preparing other ingredients. In a large bowl mix mayonnaise, vinegar, mustard, sugar, salt and black pepper. Toss in macaroni and chopped ingredients mixing well. Mix! Mix! Mix! This is key to distribute the flavors throughout your salad. Place in a covered container and place in the refrigerator for several hours or overnight. Serve cold!
