No Bake Strawberry Cheesecake
I was eating some strawberries last night with my wife and I was reminded of this deliciously easy no bake cheese cake. I have made this for Christmas desert the past few years, and will do again this year, so I thought I'd share it with you.
Ingredients
- 250 grams Cream Cheese
- 300 ml Sour Cream
- 2 large Oranges
- 250 gram packet of Savoiardi (sponge finger biscuits/lady fingers)
- 2 x 250 gram punnets of Strawberries
Method
Lightly grease and line a cake tin or loaf pan, about 20 cm x 8 cm x 7 cm, with baking paper, leaving enough over the edge so that it can be folded across the top to help seal the cheesecake.
Now zest and juice the two large oranges, and hull and halve the strawberries. Set aside.
Whisk the cream cheese in a bowl until it is smooth, then add the sour cream and orange zest. Stir well to combine until smooth.
Place the orange juice into a shallow dish, and dip 6 savoiardi into the juice one at a time and line the bottom of the tin, trimming them if necessary.
Spoon 1/3 of the cream cheese mixture over the savoiardi and top with a single layer of strawberries.
Repeat this process twice more, ending with the cream cheese mixture. (remember, the bottom of the tin/pan will become the top of the cheesecake once turned out)
Cover with the overlapping baking paper and wrap with clingfilm and refrigerate for 2 - 3 hours, or overnight.
When ready to serve, transfer to a serving platter and top with remaining strawberries and sprinkle with icing sugar.
