Blueberry Banana Oatmeal pancakes
I love making these pancakes in place of regular flour pancakes. The banana adds a nice sweetness to the pancakes, requiring less syrup. They are super delicious and very easy to make! They're also way healthier than regular pancakes or boxed pancake mix.
Blueberry banana oatmeal pancakes
Ingredients:
- 2 cups oatmeal flour
- 1 ripe banana, mashed
- 1 cup blueberries
- 1 egg
- 3 tablespoons oil
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup milk
Directions:
- In a bowl, mix together the oil, egg and sugar.
- Add the oatmeal flour, baking powder, salt and milk, and stir together.
- Add the mashed banana and stir slightly, but do not over mix; finally, fold in the blueberries.
- In a hot oiled griddle or cast iron pan, add the batter in 1/3 cups. Cook for about 2 minutes on each side or until the batter gets bubbly and dry on the sides, then flip. Serve with butter and warm syrup.
