One Pan, Four Kinds of Muffins: Banana, Carrot, Blueberry, and Bran Raisin.
With this recipe there will be some extra dishes used up in the process but don't fret, they can all be done before the baking comes out of the oven. I feel it's worth the extra work to get all those textures and flavors.
To begin preheat your oven to 350F gather two large mixing bowls and four smaller bowls. Also collect your ingredients. Ready set lets get baking.
Banana, blueberry, carrot, and bran raisin.
Dry ingredients
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
In a separate bowl mix these ingredients together and set aside.
Wet ingredients
1 cup sugar
1 teaspoon vanilla
2 eggs
1 cup milk
1/2 cup canola oil
In a separate bowl mix together these ingre and set aside.
step three of the process
Here's where we bring it together. Get out four small bowls like ones you would use for cereal.
In one bowl add one small banana mashed.
In bowl two add half a cup of frozen blueberries
in bowl three add 1/2 cup grated carrot and 1/2 teaspoon cinnamon
in bowl four add 1/4 cup bran and 1/2 cup rasins and add 3 tablespoons milk.
Pulling it all together.
Divide wet ingredients into four equal parts among the smaller bowls of your various flavor ingredients. About 1/2 cup each. Mix well.
Now do the same with your dry ingredients also about a 1/2 cup each. Mix gently until just combines. You don't want to over stir as it will make a tough muffin. We want them to be airy and light.
Let's bake
Using muffin papers spoon in three equal parts of the batter into your pan. Do the same with the rest. In a preheated oven begin baking your muffins. Set a timer and bake for 30 minutes. Allow to cool for ten minutes and enjoy warm with butter or save for later. Great in school lunches.
