So easy, you can have your kids make this for you! SCORE!

I originally found a recipe like this from couponsforyou.com. My version is slightly modified, but this recipe seems forgiving. So add or subtract what you like.

It's healthy, fast, easy, home-cooked (skip fast food), feeds the family and with one pot to clean up, how can you complain?! Families are busy now-a-days, you don't have to skip healthy meals because of your schedules. This is even a great recipe for days you just don't want to deal with all the cooking and cleaning! Have a lazy kitchen day, you deserve it.

We love this Italian Chicken, potato, and bean recipe, and use it often.

Prep time: 10 min
Cook time: 1 hour
Ready in: 1 hour 10 min
Yields: 4-6

What you need

  • aluminum foil
  • 9x13 casserole dish
  • Spray olive oil (if pan isn't non-stick)
  • 2 boneless chicken breasts, thawed and halved
  • 2 cups Fresh green beans (or sub with 2 cans green beans)
  • 4 Potatoes Yukon Gold (Redskin works too), chopped/cubed
  • 1 pack Dry Italian seasoning
  • Dash Garlic Salt (optional)
  • Dash Black pepper (optional)
  • 1 cup Melted coconut oil (or butter)

Suggested substitutions;

Instead of beans, try broccoli or asparagus

Instead of coconut oil, try regular butter (although not as healthy)

Instead of Yukon Gold potatoes, try Redskin

If you are on a restricted salt diet, don't add the Garlic salt

Don't want to use oil or butter? Try a can of low sodium chicken broth

1-2-3...

  1. Spray your casserole dish with olive oil. Arrange your beans, halved chicken and chopped potatoes in rows (lengthwise) in the dish.
  2. Sprinkle all ingredients with dash of garlic salt, pepper, and the Italian seasoning. Pour melted coconut oil on top as evenly as possible.
  3. Cover with aluminum foil and bake for 1 hour at 350. Enjoy!
