1. Papaya : 1 kg

2. Sugar : 1 kg

3. Yeast : 30 g

4. Water : 1 litre


Preparation and Cooking

1. Peel the skin and remove the seeds of papaya and boil them in a closed vessel for 10 minutes with sugar and water.

2. Cool the cooked pulp and squeeze them to take the juice.

3. Filter it through a muslin cloth and transfer into a ceramic jar.

4. Add 30 g of yeast, stir well and tie the mouth of the jar tightly with a clean, double folded cloth.

5. Keep the jar in a dry place for 2 weeks.

6. After 2 weeks, open the jar and filter the contents through a clean, double folded cloth.

7. Keep the filtrate as such for another 2 months in a clean, capped glass bottle with its mouth closed.

8. Wine will be ready by that time and it looks like a clear liquid with a pale yellow colour.
