A Delicious Breakfast Treat

If you like muffins and you like pecan pie, this is a great way to easily combine the two treats for one incredible breakfast or snack. These muffins are easy to make and only require a few ingredients. They taste delicious. So if you are looking for a new muffin to stave off your muffin craving, give this one a try.

Yields: About 18 to 20 muffins


  • 2 cups brown sugar, packed
  • 1 cup flour, all-purpose
  • 2 cups pecans, chopped
  • 4 large eggs
  • 2 sticks butter or margarine, melted
  • 1 tbsp vanilla extract
  • 1/2 tsp cinnamon


  1. Mix together sugar, flour, and pecans in a large bowl.
  2. In a small bowl mix the eggs until foamy. Then add the melted margarine and spices and continue to mix.
  3. Pour the egg mixture into the flour mixture. Then add the vanilla and the cinnamon and mix together well.
  4. Line a cupcake tin with paper liners and pour the muffin batter to fill them 2/3 full.
  5. Bake the muffins for about 20 to 25 minutes at 350 degrees. (Bake until brown)
