Lazy Tuesday

It's a lazy Tuesday around my house. We are watching cartoons and spending time with the kids. I had two things in my freezer: a bag of boneless skinless chicken breasts and tilapia. I had just made a batch of gizzards yesterday, so the vegetable oil was left over. This made my decision an easy one: we're having fried chicken.

My kids love the small chicken bites at chick-fil-a. So, I thought I could make them at home. We still had a few different kinds of dipping sauces left over from fast food restaurants like McDonalds, Chick-Fil-A, and Whataburger. I keep them in the refrigerator and cook with them from time to time.

They loved the popcorn chicken that I made for lunch! So, I'm writing this hub in order to save and share the recipe with all my readers. If you get a chance to try this recipe, please leave your comments below and let me know how you liked it. If you did something different, like adding or taking an ingredient out, please let us know that too and how your version tasted.

KFC Popcorn Chicken - Video Recipe

Nicko's Popcorn Chicken Recipe

The recipe to the right is from Nicko's Kitchen on Youtube. He makes a popcorn chicken that is pretty close to KFC's recipe. If you don't have season all in your arsenal, you may want to try his recipe. He adds a few different seasoning ingredients to his flour mixture including: salt, pepper, onion powder, and powdered sugar. I was a bit shocked about the powdered sugar.

For his wet ingredients, he used egg whites and milk; whereas in my recipe, I used the whole egg (and most recipes do). Obviously the egg white recipe would be a healthier option; but then again, you're eating fried food so you're not exactly concerned about eating healthier foods; nah, neither am I. ;-)

In a third bowl, Nicko adds panko bread crumbs. This is an ingredient that I don't always have on hand. However, when you cook with panko bread crumbs your dish will be more crunchy and flavorful. I love cooking with panko so try that! Panko bread crumbs are found in the Asian section of your grocery store.

He individually dips his chicken bites into each of the bowls. I'm not sure about you, but I just don't have that much time! I divide the chicken into three portions and put all the pieces into the wet and dry ingredients at once. That way it doesn't take you several hours to make this dish. He also dipped his several times; I only dipped mine once and they were perfect.
