"Prune Raisin Nut Snack Cake"
Prune Raisin Nut Snack Cake
Ingredients:
1 1/2 cup Packed brown sugar
2 eggs
2 cups unbleached flour
1 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla extract
1 cup prune juice
1 cup of canola oil
1 cup floured raisins
1 cup walnuts or pecans
Direction to prepare:
Mix sugar, eggs, flour, salt, baking powder, nutmeg, cinnamom, vanilla extract together and add: 1 cup oil,pecans and raisins. Spray and flour a bundt pan or an oblong pan. Por in cake batter and bake at 350 degrees for about 45 minutes or until done. You can leave it without frosting and just sprinkle with powdered sugar, if you like or just eat it like it came out the oven. I think it's good without frosting.
