Tamarind Rice - Recipe for Masala Pulihora
Tamarind Rice also known as Puli Saadam or Pulihora or Puliyodarai is a tamil speciality. This is a nice item you can pack for your childs lunch or when you go on picnics as this does not spoil easily. Infact it tastes better the next day! Tamarind Rice Recipe - Ingredients and Preperation Method
Tamarind Rice Ingredients
- 250 Grams Basmati/good quality Rice
- 50 Grams Groundnuts
- 10 gms Tamarind
- 5 Gms Split Bengal Gram and black gram
- 1 tsp Jaggery
- Corinder leaves
- Pulihora Masala (Roast 100 gm Coriander seeds, 2 Red Chillies, 1/4 tsp black gram, 1/4 tsp bengal gram, 1/4 tsp Fenugreek Seeds, 1/2 tsp Pepper, a small piece of Chinnamon, 2 pinch asafoetida in 1 tsp of Oil in medium heat. Once cool grind it to a fine powder.)
Method of Preperation of Pulihora Rice
Pressure Cook the rice with less water. Once ready add 1/4 tsp of turmeric powder and 1 tsp Oil and keep aside to cool. Soak the tamarind in one cup of warm water for some time and extract the juice by adding water. In a thick bottomed pan add and bring to boil. Add one tsp jaggery and allow to dissolve and form a thick paste. Remove from heat and allow it to cool. Now mix the pulihora masala, salt and tamarind paste and mix well. Prepare a seasoning of mustard seeds and red chillies. Once it crackles add bengal gram, black gram and ground nut and roast well. Finally add asafoetida,curry leaves and coriander leaves and add to the rice and mix well without mashing it. Keep aside and serve after half an hour.
