Pumpkin Cream Cheese Muffins…Copycat Starbucks Recipe
Pumpkin is everywhere!
Every year when it turns from summer to fall and the leaves begin to change, there's nothing else that gets people in the mood for this crisp season than pumpkin foods. Whether it's a pumpkin spice latte, pumpkin bread, or a piece of pumpkin pie…people LOVE pumpkin flavored foods this time of year!
Now you can make a super easy and super delicious "dessert" with just a handful of ingredients. You will want to make sure to add these to your Thanksgiving Day meal. These are perfect for breakfast, dessert, or a mid-day snack!
Pumpkin Cream Cheese Muffin Recipe
Preheat oven to 350 degrees
Cream Cheese Filling:
- 8 oz block of cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla
Combine all three ingredients using an electric mixer on medium-high speed. Continue to mix until smooth and creamy. Cover and set aside while preparing the muffin batter.
- 1 Box Yellow Cake Mix
- 3 Eggs
- Vegetable Oil (use amount specified on box mix)
- Water (use amount specified on box mix)
- 1 (15oz.) can pumpkin
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Place all ingredients in a large bowl. Use an electric mixer on low speed and combine the ingredients for about 30 seconds. Continue to mix on medium for an addition 2 minutes. Be sure to scrape down the side of the bowl to ensure everything is properly combined.
Line muffin tins with paper liners. Fill each liner 2/3 full of muffin batter. Drop a tablespoon of the cream cheese mixture on top of the muffin batter. Bake at 350 degrees for 16-18 minutes.
Cool to room temperature on baking rack!!! Eat and enjoy immediately or store in a sealed container in the refrigerator.
