Pumpkin Dark Chocolate Chunk Cookies

Ingredients
For the cookies:
- 1 cup sugar
- 1 cup brown sugar
- 1/2 cup non-dairy butter
- 1 egg replacer
- 15 ounces pumpkin puree
- 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3.5 ounces chocolate chunks or chips, (or more, if preferred!)
For the frosting:
- 2 tablespoons non-dairy butter
- 2 1/2 tablespoons unsweetened non-dairy milk
- 1/2 cup brown sugar
- 1 cup confectioner's sugar
- 1 teaspoon vanilla extract
Instructions
- Beat sugar and butter until smooth. Mix egg replacer and pumpkin puree into butter mixture.
- Combine flour, baking soda, baking powder, and salt in a bowl. Slowly add to pumpkin mixture and mix until combined.
- Stir chocolate chunks into pumpkin mixture.
- Spray a cookie sheet with non-stick spray.
- Spoon batter onto cookie sheet and bake at 375 degrees Fahrenheit for 12-15 minutes, or until slightly browned.
- For the frosting, combine butter, milk, and brown sugar in a saucepan over medium-low heat. Stirring, heat until sugar has dissolved.
- Stir confectioner's sugar and vanilla into brown sugar mixture.
- Frost cookies.
