South Indian Quick Recipe : Carrot Thoran (Indian Style Carrot Coconut Stir Fry)

Ingredients

  1. Carrot - 250 gms (finely chopped)
  2. Big Onion - 1 No. (finely chopped)
  3. Coconut - 3 to 4 Tablespoon (grated)
  4. Green Chilli - 2 Nos. (slit into 2)
  5. Turmeric Powder - 1/2 Teaspoon
  6. Mustard Seeds - 1/2 Teaspoon
  7. Curry Leaves - 7 to 8 Nos.
  8. Coconut Oil - 1 Tablespoon
  9. Salt - To Taste

Preperation

  1. Heat a non stick pan and pour 1 tablespoon coconut oil.
  2. When the oil is hot, put mustard seeds and allow them to splatter.
  3. Add the chopped onion, green chilli, curry leaves and turmeric powder.
  4. Saute for 1 minute.
  5. Add the chopped carrot.
  6. Add Salt to taste
  7. Cook for 2 minutes with lid on with medium flame.
  8. Now add the grated coconut, mix well and take out of the flame.
