Quick Recipe : Kerala Style Egg Curry

  • 4 Nos. Boiled Eggs
  • 3 Nos Big Onion, Chopped
  • 1 Tablespoon Ginger
  • 6 Cloves Garlic
  • 1/2 Teaspoon Turmeric Powder
  • 1 Tablespoon Chilli Powder
  • 1 Tablespoon Corriander Powder
  • 1 Teaspoon Mustard Seeds
  • 1/2 Teaspoon Fennel Seeds
  • 10-12 Nos. Curry Leaves
  • 1 Cup Coconut Milk, Thick
  • 1 Cup Coconut Milk, Thin
  • A Pinch Sugar
  • 2 Tablespoon Coconut Oil


  1. Heat the pan. Pour 2 tablespoon of coconut oil.
  2. Put in the mustard seeds, fennel seeds and curry leaves.
  3. Put the chopped onion, ginger, garlic and salt
  4. Saute it till they are light brown in color.
  5. Now add the turmeric powder, chilli powder and corriander powder.
  6. Saute them for 2 minutes.
  7. Now pour in the thinner extract of coconut milk.
  8. Put the boiled egg and allow them to cook for 3 minutes.
  9. Sim the flame and pour thicker extract of coconut milk.
  10. Add a pinch of sugar to balace the taste.
  11. Cook for 1 minute and garnish with curry leaves.

      I love curry! I've only had Indian curry a few times, and that was at Indian restaurants in Hawaii and California, so i'm not sure just how "authentic" they were...but I still enjoyed them nonetheless.

      Here in Hawaii we eat "local style" curry a lot - which doesn't have the coconut milk like Indian and Thai do (too bad, cuz I love that coconut milk in there).

      I definitely wanna try this recipe. I never had eggs in there, though...usually some kind of beef, chicken, tofu, or shrimp...that should be interesting.
