A Healthier Banana Bread
Banana Bread was a delight whenever some of the bananas would get soft with those black spots on them. Because it is made with applesauce instead of using more sugar it is healthier.
This recipe was not the basic recipe but was a way that the left over honey could be used when the honey cookies were all made.
- 2 cups flour
- ¼ cup honey
- 1/4 tsp cinnamon
- 1/8 tsp. nutmeg
- 2 eggs
- 1/4 cup applesauce
- 1 tablespoon oil
- 2 tsp. Baking powder
- 2 bananas, ripe & mashed
- 1/2 tsp. Baking soda
- 2 tsp. Vanilla
How to Mix and Bake
Preheat oven to 350 deg.
Combine flour, baking powder, baking soda, cinnamon and nutmeg in a bowl.
In another bowl mix together 2 eggs, applesauce & oil. Add honey, bananas & vanilla.
Add the flour mixture, slowly to the banana mixture.
Mix well but do not overbeat
Pour mixture into a non-stick loaf pan.
Bake about 35 minutes to 45 minutes until toothpick inserted in middle comes out clean.
Let the banana bread cool in pan for 10 minutes.
Remove the bread from the pan and let it cool completely, then slice into 1 inch thick slices.
Chopped walnuts or pecans can be added to this recipe if desire.
For those of you who are allergic to honey like my daughter, you can substitute Karo Syrup.. I prefer to use maple syrup which I normally have in the cupboard to use on pancakes and waffles. Depending on which you use the color of your batter will be lighter or darker as will your loaf of banana bread.
