Sausage, Apple & Rice Casserole

With Fall coming upon us the abundance of apples is greater and we use them in more recipes to blend and add flavor.

This casserole is quick and easy to make. I first tried it at work where they used all of the left over sausge from breakfast to make this dish. I worked with the recipe until I came up with this one. This was another favorite recipe that my husband liked and I made it often. In the winter I would use my apple slices that I had put up in jars.

Ingredients

1 lb. sausage browned
4-5 apples, peeled and sliced
1 cup apple juice
cinnamon and sugar to taste
1 cup minute rice

How To Mix and Bake

Brown sausage and cut into small pieces


Heat apples in microwave with 1/3 cup sugar and cinnamon to taste for 10 minutes.


Bring apple juice to a boil. I substituted the water with apple juice for a better taste to the rice.

Remove the juice from stove, add rice and cover for 5 minutes


combine, sausage, rice and apples in a casserole.


Bake in oven at 350 deg. for approximately 30 minutes

Makes 4 servings.

I mix mine in the microwave in a casserole and cook for 20 minutes at 50 percent. It can be made in the crock pot as well.
