Sweet And Smoky Barbecue Sauce

Ask most American's to describe their favorite Barbecue Sauce and they'll evoke a thick, sweet, red, ketchup based sauce with a zing of vinegar and a whiff of liquid smoke. In short, the sort of sauce Kansas City barbecue buffs have slathered on ribs and briskets for many years. Many people do claim that this is the truly, The Worlds Best Barbecue Sauce.

6 Tablespoons Dark Brown Sugar

1/2 Cup Apple Cider Vinegar

1/2 Cup Molasses

1/2 Cup Honey

1/2 Cup Worcestershire Sauce

2 Tablespoons Dark Rum

2 Tablespoons Yellow Mustard

2 Tablespoons Liquid Smoke

1 Tablespoon Pure Chili Powder

2 Teaspoons Fresh Ground Black Pepper

2 Teaspoons Garlic Powder

1 Teaspoon Ground Allspice

1 Teaspoon Ground Cloves

4 Cups of Ketchup

Salt and Pepper To Taste

Add all the ingredients to a heavy stock pot and cook until all the ingredients are disolved. Reduce heat to just a simmer and cook for 30 more minutes and as I said earlier everyone who has ever eaten or tasted this sauce says that it truly is, The Worlds Best Barbecue Sauce.

Righteous Ribs or Worlds Best Barbecue Ribs

Eating these ribs can be an almost religious experience, especially when combined with the recipe over there to the right for Sweet And Smoky Barbecue Sauce. I just simply love the succulence and tenderness of baby back ribs, but you could certainly use beef ribs for this recipe. You could also use Country Style Ribs available at your local supermarket or from your butcher.

For This Recipe You Will Need

6 Racks of Baby Back Ribs, remove the papery silver skin on the back of the ribs or have your butcher do it.

Basic BBQ Rub

Here's the grand-daddy of all barbecue rubs, but don't let its simplicity fool you. There's a heap of flavor in this basic rub and it really is the best BBQ Rub Recipe you will ever find anywhere.

1 Cup of Course Kosher Salt or Sea Salt

1 Cup Dark Brown Sugar

1 Cup Of Paprika

3 Tablespoons Fresh Ground Black Pepper

3 Tablespoons Garlic Powder

3 Tablespoons Onion Powder

1 Heaping Tablespoon Ground Cayenne Pepper

Mix all together in a large bowl and mix very well. You can put this in a large shaker for storage.

You will need to make the above BBQ rub recipe and put it aside. Also make the BBQ Sauce Recipe above right and put it to the side.

You need 2 Cups of Applewood Chips and you want to soak them overnight in apple cider.

Set your grill up for indirect grilling. You want your hot coals over on one side of your grill and have some extra hot coals on the side in case you need to add some later. Toss your soaked apple-wood chips on the coals a few at a time as the ribs cook.

While your coals are getting just right rub down the ribs with the above BBQ rub on both sides and place them in the refrigerator for an hour. After a hour place your ribs in the center of the grill in a rib rack if you have one. Brush the ribs with the Barbecue Sauce and continue cooking with indirect heat. When done the meat will be very tender and you will see it pulling back from the bones. Transfer the ribs to a platter and sprinkle with more of the BBQ Rub. Serve more Barbecue Sauce on the side.
