Ummm, Rocky Mountain Oysters, better known as bull balls. Yep, there are people who eat balls (besides the human kind) and I found a website with tasty recipes for you folks out there wondering what to serve your guests on Super Bowl Sunday. Click the link below and.....enjoy!

Calf Fries in Wine Sauce

40 bull testicles

1 or 2 cloves of garlic

Onion to taste

2 Tablespoons corn starch

1 cup white wine

Salt and pepper and tabasco to taste

1 cup water

*Wash and clean testicles thoroughly. Boil until tender*, about 30 to 45 minutes.

Drain thoroughly.

Sauté oysters, onion and garlic until brown.

Dissolve corn starch and water in cup, then add to oysters.

Add wine and let simmer until sauce thickens.

Add seasonings and serve steaming hot.

*Hey I would wash balls before I...well...you know.

      They taste great! Very similiar to calamari. When I make them I usually flour them and deep fry them. I serve them with marinara sauce to dip with and there absolutely delicious it!

      We fried them and fixed them like Veal Picata and they were great. Do not over bread them or use corn meal. Their flavor is very delicate.

      Hello,try blanching the testicles,slice thin,garlic,salt and

      peper to taste then BBQ over hot bricketts just to brown

      do not overcook,serve hot aconpanied with your favorite

      sause,try chimichurry sause you will be surprised,thank you.

      Good for you. There should be a link to more bullball recipes. The closest I've come to bullballs as a meal was while visiting a friend whose roommate was cooking bull penis. I saw something hanging over the pot and he explained what it was. Anyway there is also something called "manish" soup that men from the islands and Belize eat

      I have been looking for a recipe that didn't require coating and frying of the "Rocky Mountain Oysters" --like fried chicken or onion rings!  It was surprising to find your apparent braising recipe that I can adapt! Today I ordered two pounds of "bull balls" and will try several processes -- completely skinning the membrane, scoring of the membrane, poking holes in the membrane, with all to be marinated before braising.  I have found that braising with a reduction of the braising sauce is my preference. Of course, sherry, rhine wine, port, or Burgandy wine will be an addition to the sauce.

      My LAST choice is frying, but I will try it anyway!  I'm tired of chicken and pork -- because the only variations seem to require use of sauces.  I am not enamored of "sauces."  The only "sauce" I like is really hot horseradish sauce mixed with fat free sour cream to avoid "SDS"  (sudden death syndrome)  (just kidding).  But if a reduction of a wine sauce can complement these "balls," that''s what I'll use!

      I am determined to find the best recipe for "bull balls" I can find . . . and I'll let you know what works!  By the way, Andrew Zimmern peaked my curiosity about animal testicles . . . .  My  deceased husband had a major problem with meat that was not "main stream."  I introduced him to escargot and calamari.  But, my husband wouldn't even try beef tongue!  Now that I can explore the panoply of food options, thank Gawd Mr. Zimmern has introduced to me a whole range of options beyond what I even knew!    Alice Venner  - La Pine, Oregon
