Salad Bowl OR Rice Bowl? Easy Dinner Recipe
This is a very pretty and very filling meal to itself. It is also made from healthy ingredients.
It is another come home from work easy make dinner. So, stop at the store and purchase the fresh ingredients below and DO add any other produce item that looks good that day too!
When you get home, place the rice in the rice cooker ASAP, then go change clothes and check the mail.
When the rice is done leave it on the warm button on the rice cooker and begin the big salad chop.
The whole idea of this evening meal began with how much we like rice bowl meals and how much we like salads. So, why not combine them and make a salad rice bowl dish? The brown rice makes this particularly filling as does adding left-over chicken thighs.

Ingredients
- 2 C. brown rice, cooked in rice cooker
- 4 slices veggie cheese, Pepper Jack used here
- 1head Romaine lettuce, chopped
- 1 bunch green onions
- 5 sweet miniature bell peppers, sliced into rings
- 1/2 cucumber, slices cut into quarters
- 1 heart of celery (small one), sliced, include green heads
- 1/4 C. fresh parsley, chopped
- 4 chicken thighs, leftovers
- 1 t. salad seasonings
- 1 sweet picked pepperoncini per person
- 1/4 C. Annie's Lite Green Goddess Dressin
- 1 shake of soy sauce, Placed on table for personal seasoning

- Put the rice in the rice cooker when you first get home from work.
- Use a clear bowl if possible. Use rice cooker to make the rice ahead and let it sit on warm. Chop lettuce fairly fine Chop all the other salad ingredients. Cube chicken thighs
- Assemble in order from rice to lettuce up. Place the chicken in the middle. Take a look at the picture for more!
Serve!
Serve at table side. You make a big deal out of serving this. Drizzle the Annies Green Goddess Dressing over the lettuce and vegetable areas of the salad; Place equal parts of the chicken on the plate, and then toss the green salad part. Then serve the salad, and rice next to (not on top of the meat) on each person’s plate.
This is so appetizing when served this way! I always put soy sauce on the table as it is so nice shaken on the rice.
Do supplement the ingredient list with your favorite produce. Always add what looked good at the market that day! Sometimes I split an avocado and serve one half to each person and they love that! Tomatoes are usually a must but they did not look that good when I shopped for this, so, no tomatoes this time! You could add salsa too!
