Saoji Chicken

Ingredients
- 500 gm Chicken
- 1 cup oil
- 2 tablespoons ginger garlic paste
- 1 tablespoon turmeric powder
- 2 tablespoons red chili powder
- 1 tablespoon dried fenugreek leaves
- 2 tablespoons saoji masala
- 1 tablespoon garam masala
- 2 bay leaf
Onion Paste:
- 4 medium onion, roughly chopped
Garam Masala Paste:
- 2 tablespoons rice
- 2 tablespoons coriander
- 1-2 black cardamom
- 1-2 green cardamom
- 1 tablespoon cloves
- 2 tablespoons cumin seeds
- 1 tablespoon poppy seeds
- 1-2 stone flower
- 2 tablespoons oil
Red chili paste:
- 4-5 patna red chili
Coconut Paste:
- 2 tablespoons coconut

Instruction
For paste
Garam Masala Paste
Take a frying pan, add 2 tbsp oil, black cardamom, cinnamon, green cardamom, stone flower, clove, poppy seeds, and cumin. Sauté till golden brown, cool it, then grind it and make a paste.
In the same frying pan, add coriander seeds and rice, sauté till golden brown. Cool it, then grind it and make a paste.
Coconut Paste
In the same frying pan add coconut, sauté till golden brown. Cool it, then grind it and make a paste.
Red Chili Paste
Add dried red chili and oil fry, sauté till golden brown. Cool it, then grind it and make a paste.
Onion Paste
In the same frying, add onions, sauté till golden brown. Cool it, then grind it and make a paste.
Making
- Take a Handi, add oil heat it, add Bay Leaf, sauté for 1 min.
- Then add ginger garlic paste sauté for 2 mins, add turmeric powder, red chilly powder, onion paste, garam masala paste, red chilly paste, coconut paste, sauté for 3 mins.
- Add chicken sauté till 5 mins and cover with a lid, cook it for 10 mins.
- Add hot water mix it, cover with a lid, and cook it till the chicken looks soft and tender.
- Add coriander leaves, saoji masala mix it and cook for another some minutes.
- Put off the flame and add coriander leaves. You can serve the chicken with parotta or rice.
Suggestion:
- The more you cook the tastier will be the chicken.
