Gumbos can be broadly divided between the use of okra as a thickener, and recipes using filé powder in that role. Roux may be added to either and it is quite common for roux to be the sole thickening agent and base for the stew. Whichever way you take your creation, if you stick with the basics it should be delicious. Experiment a little, change up the ingredients to better fit your taste palate.

When you start to get a handle on the basics of a good gumbo, you can then start to experiment on your own original creation. In addition to different seafood ingredients, you may also want to try adding smoked sausage and chicken into your stock pot. You can decide if you want to keep the flavors clean and crisp, or if you want to kick it up with additional spices or other ingredients.
