Shrimp And Grits Casserole Recipe

Shrimp and Grits has always been a southern tradition and a lot of people simply love shrimp and grits. This recipe for Shrimp and Grits Casserole is one of the tastiest I have ever eaten. Some people prefer to leave out the ground cayenne pepper but I like it in there. You should try it in there because it it really isn't that hot and it gives the dish soul. I have also made this casserole and added in crumbled bacon. It really is great either way.

2 Cups Whole Milk

1 Cup Sweet Sue Chicken Broth

2 Cups Quick or Instant Grits

1 Teaspoon Salt

1 Cup Fresh Parmesan Cheese

1 8 Oz Pkg Regular Cream Cheese

2 Tablespoons Fine Diced Green Onions Including Tops

3 Large Eggs

1 Pound Peeled And Deviened Shrimp

1 Teaspoon Ground Cayenne Pepper

Cooking Spray

Preheat your oven to 350 degrees. Combine your milk and chicken broth in a large heavy sauce pan and bring to a boil. Gradually whisk in your grits and the salt stirring constantly. Cook 5 minutes or until thickened. Stir in your parmesan cheese and cream cheese and mix throughly. Stir in your fine chopped green onions, cayenne pepper, eggs that you have beaten well and your shrimp. Mix together well and then spray a glass baking dish with cooking spray and pour your shrimp and grits mixture out into the casserole dish. Bake at 350 degrees for 20 - 25 minutes until well set and then serve at once while hot.
