Simple chocolate ganache

  • 7oz heavy cream
  • 7oz dark chocolate


  1. Over a saucepan of gently simmering water, melt the double cream and chocolate together, slowly. Stir occasionally to combine.
  2. This ganache can be used straight away while still warm and of pouring consistency; it can also be left to cool to a spreadable texture; or once cooled completely you may re-whisk it to make the mixture even lighter. Or just eat it raw...
