Simple Scallion Egg Pancake
Sometimes, I like to cook something from scratch for breakfast. An easy recipe I learned from my aunt is scallion egg pancake. It is tasty and can be combined with some other items such as fish powder for a great breakfast.

How To Make It?
Here are the ingredients:
- 2 eggs
- 1 cup of flower
- 1/2 cup of cold water
- diced fresh scallions (a few stalks)
- cooking oil
In a large bowl, add all the ingredients above except the oil. Mix with a large spoon until all the lumps are gone. There should be a light mixture and free flowing batter texture. If need, add some more water.
In a pan, add a few table spoon of oil and heat until hot. Spoon the batter into the pan and it should start to sizzle a bit. Add enough batter for a pancake size about 6 inches round. Let cook till brown and flip over cook the other side equally. Remove pancake an place on a paper towel to soak up the extra oil. Repeat and make about 6 pancakes. Enjoy a nice breakfast from scratch.
Optionally, you can add some fish powder from the store and roll it up into a roll.
Cook from scratch is not hard. It is economical and the ingredients are fresh. You can control the amount of salt and oil. This is a great dish for Sunday mornings. Scallion egg pancake is a traditional Chinese dish.
