Soy Milk Almond Jelly or Pudding

This soy milk almond jelly is absolutely welcoming under scorching hot weather. Kids love them, adults adore them. Easy and quick to prepare, these pudding or jelly recipe is fantastic dessert ideas for any festive celebration or party. You’ll love it ! You can opt for healthier version by using low sugar soy milk or make your own soy milk with small quantity of sugar.

Ingredients

3 cups of Soy Milk

1 1/2 tbsp agar-agar powder

3 tbsp sugar

½ cup water

1 tsp of almond essence

4 fresh water chestnuts

 

Boiling Method

1) Remove the skin of the water chestnuts and cut the chestnuts into very small cubes.

2) Boil the milk together with the agar-agar powder and sugar at low heat.

3) Keep on stirring until the agar-agar powder and sugar dissolves.

4) When the sugar has melted, add the almond essence and water chestnuts. Stir well.

5) Pour into mould while it is still warm.

6) Cool and chill in the fridge to set.

7) Remove from mould and garnish with fruits before serving.

Microwave Method

1) Remove the skin of the water chestnuts and cut the chestnuts into very small cubes.

2) Boil the milk together with the agar-agar powder and sugar in a microwave container for about 10 minutes on High (Maximum) Heat with lid on. Make sure that the container is deep enough so that the milk does not boil over.

3) Remove from the over and add almond essence, water chestnuts and stir well.

4) Pour into mould while it is still warm.

5) Cool and chill in the fridge to set.

6) Remove from mould and garnish with fruits before serving.

Soy Milk Cincau Jelly Recipe

Ingredients:


1 packet of 450ml Soy Milk (or 2 cups of Soy Milk)
200g Cincau (Grass Jelly)
4 tsp agar-agar powder

1 tsp of vanilla essence

sugar (if you need more sweetness)

Method:


1. Cut the cincau or grass jelly into small cubes. Fill the mould half with this cut jelly.

2. Boil the soy milk with agar-agar powder in a small pot. Stir until the agar-agar dissolves.

3. Taste the soy milk mixture to see if it is sweet enough for you, add sugar if necessary. Then, add the vanilla essence and stir well.

4. Scoop the soy milk mixture into the mould.

5. Let it cool before chilling in the refrigerator. It may take a few hours to set.

6. Remove from mould and serve with fruits such as cocktail fruits or lychee.
