Spaghetti with spring onion and mushrooms

Since a couple of days I wanted to try something new and different. I wanted to give my usual pasta recipe a new life, but I did not know what combination would work. One thing I definitely wanted to use was heavy crème, because I had never used this ingredient to make a pasta sauce but heard many good things about it.

I got an epiphany when I saw spring onions and mushroom in my local supermarket. That is it, I thought! I am going to make spaghetti a la spring onion and mushroom. When arrived home, I went straight to the kitchen to work with the ingredients.

The result was an easy, enriched and delicious dinner that I could not resist to share with you all.

Ingredients

1 large spring onion

1 chicken breasts (cut into small pieces)

250 gr chestnut mushrooms

2 tablespoon olive oil

1 tomato

2/3 cup heavy cream

1 teaspoon of garlic and ginger paste

Spaghetti

Seasoning (according to your taste: salt, chilli pepper, garam masala, curry powder) [I like Asian spices, but it is totally up to you which spices you want to add]

Directions

Fill a pot with water and bring it to a boil. Add a bit of salt and the pasta. After approx. 10 min check whether it is cooked. If yes, strain the water and add some olive oil in the spaghetti so that it doesn’t get sticky.

Pour the oil into a pan and add the mushrooms. Stir-fry them for 5 to 7 min till they are soft. Take the mushrooms out of the pan and set aside.

Add the chicken in the same pan (there should be enough oil for the chicken). When the chicken turns white, add the chopped tomato, garlic/ginger paste and season it according to your taste.

After 2 - 3 min, add the mushrooms. Mix everything together and let it cook for another 3 min.

Add the chopped spring onions. Cook it with the chicken and mushrooms till the onions are soft.

Finally, add the heavy creme and give it a stir. Cook the sauce for 5 min.

Now that your sauce is done, get a plate and put some spaghetti on it. Top it with the sauce and voila - spaghetti with spring onions and mushrooms is ready for you to dig in!

Extra tip: Sprinkle some Parmesan cheese on the top to add extra flavor.
