Mutton Rezala Recipe
Ingredients:
- Mutton 2 kg
- Ginger paste 2 tablespoons
- 2 teaspoons of garlic paste
- 1 cup of onion paste
- 2 teaspoons of turmeric powder
- 2 teaspoons of chili powder
- 2 teaspoons of cumin powder
- 2 teaspoons of coriander powder
- 2 tablespoons of poppy seed paste
- 1 cup of oil
- Ghee 2 tablespoons
- Salt according to taste
- 10 green chillies
- 2 bay leaves
- 3 pieces of cinnamon
- 4 cardamoms
- 2 cups of chopped onion
- 6 potatoes
Preparation:
Cut the goat meat into pieces, wash and drain the water. Heat oil in a pan and fry the onion brown with cinnamon, cardamom and bay leaves. Now fry with meat and salt for 10-15 minutes. When the meat is fried, cover it with poppy seed paste and cumin powder. After 10-15 minutes open the lid and cook with 1 cup of hot water on medium heat for a while and cover. Cut the potatoes in half lengthwise and cut them into 2 pieces. When the water is dry, cover it with 1 to 1.5 cups of hot water, shake it with potatoes and green chillies. After 10 minutes, open the lid, shake with cumin powder and poppy seed paste and cover again. When the potatoes are boiled, reduce the heat, open the lid and cover it with a little more water if needed. Leave a little oil in the meat and cover it with 1 tablespoon of ghee. After 10 minutes, turn off the stove and keep it down for a while. Finish cooking, serve.
Eidy Mutton Korma Recipe
Ingredients:
- 1 kg of mutton
- 1 tablespoon of ginger paste
- 4 large pieces of cinnamon
- 2 bay leaves
- 2 teaspoons of salt
- half a cup of ghee
- 8 green chillies
- 2 tablespoons of liquid milk
- 3 cups of onion paste
- 2 teaspoons of garlic paste
- 4 cardamoms
- half a cup of sour yogurt
- 4 teaspoons of sugar
- half a cup of granulated onion
- 1 tablespoon of lemon juice
- half a teaspoon of saffron.
Preparation:
Cut the meat into pieces and wash well. Cover with all the spices, sour curd, quarter cup ghee and salt and cover with hand wash water and put in the oven on medium heat. If the meat is not boiled, add more water. When the water is half drawn, cover it again with green chillies.
After 15 to 20 minutes, heat the remaining ghee in the oven and fry the onion pieces until golden. Then cover with sugar. After 5 minutes, open the lid and sprinkle saffron soaked in milk on top and cover for another 5 minutes. Then open the lid, stir lightly with lemon juice, reduce the heat completely, cover the pan and simmer for about 20 minutes to half an hour.
When the korma is smeared brown and the oil starts to come out of the spices, take it down from the oven and serve.
Bengali Mutton Korma Recipe
Ingredients:
- Mutton - 1 kg
- Yogurt - 250 grams
- Onion chop - 5 pieces
- Garlic paste - one and a half tablespoons
- Ginger paste - 1 tablespoons
- Ghee - 2 tablespoons
- Whole hot spices - for frying
- Condensed milk - 250 g
- Green chilly - 5-6
- Salt - as needed
- Sugar - 1 teaspoon.
Preparation:
Wash the meat and spread it with yoghurt. Fry the onion with hot spices in oil. When the onion is brown, add a little garlic paste. Now add meat. Once the meat is cooked, let it boil with condensed milk, you can give a little hot water if needed. When the meat is cooked, simmer for 20 minutes with raw chillies, salt and sugar. After 10 minutes, put it in a serving dish and serve it with white korma of great taste.
