Spicy Baked Fish Tacos

All of my family members are asking me about making fun food more healthier but also taste good ....Meaning not losing the flavor that comes with being healthy.

I have been telling my family and friends that you can eat healthy plus have great flavor, I myself have started changing my eating habits to be more on a healthy note so I can take better care of myself .....All we have to do is make a few changes and we can still have good food that taste good but is healthy and to prove my point I am going to transform a taco ...My kids just love them so with a few changes I'am going to make a very good and tasty healthy taco

Spicy Baked Fish Tacos

Ingredients

3/4 cup of plain panko breadcrumbs

2 tablespoon of cumin

2 tablespoon of coriander

1 1/2 teaspoon of chili powder

4 tilapia fresh fillets, cut in half lengthwise

A pinch of sea salt

A pinch of white pepper

1 cup plain greek yogurt

1-2 chipotle peppers, minced

2 oranges ( Peeled and sectioned )

1 bunch cilantro ( cleaned and stems removed )

8 soft flour tortillas

1 lime, quartered, for garnish ( optional )

Preheat the oven to 400F. In a small bowl, combine the breadcrumbs, cumin, coriander and chili powder blend well. Place the fish on a parchment paper-lined baking sheet; season with salt and pepper. Top each fillet generously with the breadcrumb mixture. Bake the fish for 5 to 10 minutes, or until the fish is firm, opaque, and has reached a safe internal temperature of 145F.

Meanwhile, in a food processor, combine the yogurt and chipotle peppers. Transfer to a small bowl and keep refrigerated until ready to eat. Prep the rest of the ingredients. Peel the oranges, separate into segments and remove any seeds. Clean the cilantro and remove the stems.

To assemble tacos, place the 1/8 of the fish in the center of a tortilla. Smear some of the chipotle yogurt on the tortilla. Add 2 oranges segments and some fresh cilantro. then serve

Quick Tip - When making the chipolte yogurt sauce make sure you control the heat by adding the chipolte peppers a little bit at a time this way you can make it as hot as you may want it as your making the sauce.
