Spicy Peanut Noodles, Quick and Easy Vegetarian Recipe

Cook Time

  • Prep time: 15 min
  • Cook time: 5 min
  • Ready in: 20 min
  • Yields: Serves 6

Ingredients

  • 1 box (1 pound) Angel hair pasta
  • 2 cups Frozen mixed vegetables
  • 3/4 cup Chunky peanut butter
  • 1/4 cup Soy sauce
  • 2-3 teaspoons Chili sauce/paste
  • 1/3 cup Milk or whipping cream
  1. Set a pot of water to boil.
  2. Cook your vegetables in the microwave according to provided instructions.
  3. While the vegetables and water are cooking measure out the four remaining ingredients into a small to medium bowl.
  4. Whisk peanut sauce together until smooth (minus the peanut chunks of course) Drain cooked vegetables if needed.
  5. Cook your noodles in the boiling water just until tender. No more than 5 minutes for angel hair pasta.
  6. Remove from heat and drain pasta. Return to pan and add the peanut sauce and vegetables. Toss together until noodles are evenly coated. Serve warm and with a smile.

      This is what I would call a perfect meal. I have eaten spicy-sesame Asian noodles before but the peanut adds a whole different flavor. I bet these taste fantasticlly good. I´ll eat your quick and easy vegetarian dish sometime soon.

      Claudia, I agree with you! "perfect meals" is what I love most ^_^ Something that is healthy, includes multiple food groups and is tasty. A huge bonus if its a one dish meal and super easy like this! If you could I would love to know what you think after you try it.

      Yum! My husband hates peanut butter, but I decided to get creative and try a peanut and soy sauce with some chicken and noodles the other day. He loved it and didn't even know I added the peanut butter! I will definitely give your recipe a try and add the frozen veggies and cream. Thanks! :)

      I have a metal Slumber King box spring frame nubmres on it are 4 FT 6 or G. The spring looks like cast metal with flat metal slats that are connected with a bunch of small springs. Do you have any information on the age of this product and whether or not there is a market for it? Thanks
