Spicy Brinjals
ingredients:--- half an inch ginger, peeled
two cloves of garlic
One small pink onion chopped
slight water to sprinkle
one medium sized brinjal
one cup edible oil
one teaspoon panch forum (consist of a mixture of kalomgi fennel feegunik seed and cumin seed and coriander seed)
one big tomatoes,finely chopped
1/4 tsp tumeric powder
2 dry red chili
slight amchur(dry mango pwder)
salt to taste
Method:--
1) Blend ginger and garlic in a misxer add little water to make smooth paste
2) Cut brinjal into thick slices( make 4 to 5 sliced)
3) Heat some oil in a deep frying pan on a medium flame. put the slices in layer. Let them turn light brown in colour.do both the sides. Remove and put them aside. Let the fried slices drain
4) heat some oil(one tablespoon or less ) in the frying pan and heat ,turn the flame slow and add panch forum turmeric ,amchur,salt ,tomatoes,onions and dry red chilly.cook until the spice mixture becomes thick and pastelike sauce.Mash the tomatoes and onions while stiring with the laddle .
5)now put the fried slices in the sauce and gentaly mix .Cover the pan and cook another 5 to 10 minutes on very low flame .the dish is ready .garnish with sliced tomatoes and corriander leaves .
