Spinach Cheese Casserole
Getting my children to eat their vegetables has always been somewhat of a struggle. My kids are much better about eating vegetables now that they are getting older. When they were younger I tried different ways to get them to eat different types of veggies, which was always hit and miss.
Finally I decided that I would try my favorite vegetable which has always been Spinach, yeah I know I am weird, because not too many people are fans of this veggie. For me it was easy to win the kids over and get them to enjoy Spinach with a cheesy casserole. After all doesn’t cheese make EVERYTHING taste better?

INGREDIENTS:
2 – 10 Ounce Packages of Frozen Spinach Chopped, Thawed and Drained
1 Cup Cottage Cheese
¼ Cup Butter or Margarine Cut into Pieces
1½ Cups Cheddar Cheese Cubed
3 Eggs Beaten
¼ Cup Flour
1 Teaspoon Salt
DIRECTIONS:
Mix ingredients together and pour into either a greased Crock Pot or a Casserole Dish.
Tip: I like to mix the eggs, flour, cottage cheese and butter together first and then add the other ingredients.
For Crock Pot cook on low for several hours (4 – 5) then turn to high for an hour before serving.
For Oven bake at 350 for 1 hour until mixture is hot and bubbly.
For Microwave cook on High for 6 minutes stir, cook an additional 6 minutes and stir. Some microwaves might take an additional 6 minutes so adjust times for your microwave.
