Spinach Cottage-Cheese Casserole

Ingredients
- 200 gms - Cottage cheese, cut into cubes
- 500 gms - Spinach, thawed or fresh
- 1 big size - Onion, finely chopped
- 2-3 teaspoon - Garlic paste or chopped
- 2 cups - Milk, room temperature
- 2-3 teaspoon - Cornflour
- 1/2 teaspoon - Cinnamon powder
- 1/2 teaspoon - Black pepper, crushed
- 2 tablespoon - Olive oil
- 1 teaspoon - Oregano
Tomato topping(Optional):
- 1 medium size - Tomato, chopped
- 1/2 cup - Tomato puree
- 1 small - Onion, finely chopped
- 2 tablespoon - Olive oil
- 1/2 teaspoon - Salt
- a pinch of - Sugar
- Fresh coriander, for garnishing
Instructions
- In a pan heat olive oil at medium flame and add onions. Add garlic once onion turns golden brown in color.
- Add spinach leaves to the pan and stir it well. Leave the spinach for 5 minutes at medium flame.
- In a bowl take Milk and add cornflour, cinnamon powder, black pepper, salt, Oregano. Mix all the ingredients really well having no lumps.
- Now add this mixture to the pan having spinach and onion. Mix everything well and keep stirring at medium flame until slightly thick. Switch off the flame.
- Optional -- To prepare tomato topping, take a pan and add olive oil to it. Add chopped onion and saute for 3 minutes. Add chopped Tomato, salt and pinch of sugar and keep stirring for 2 minutes. Now add Tomato puree and adjust salt. After 3-4 minutes switch off the flame.
- Take a greased baking dish and pour the spinach mixture we prepared at step 4. Spread cottage cheese cubes over it.
- Spread the tomato topping we prepared at step 5 OR you can grate cheese of your choice instead of tomato topping. Suit yourself :)
- Cover the baking dish with foil and bake at 180-degree Celcius for 15 minutes.
