Cast your vote for Vegetable Side Dish

This colorful vegetable dish is full of flavor and nutrition.

Ingredients

  • 2 tbs olive oil
  • 2 cloves garlic
  • 1/4 red onion
  • 3 cups broccoli
  • 1 medium red pepper
  • 6 leaves red kale

Step 1

Using point of knife, remove stems from kale leaves.

Step 2

Compress leaves and cut into small pieces. Set aside.

Step 3

Rinse broccoli and cut into flowerets.

Step 4

Rinse and remove seeds from red pepper. Slice.

Step 5

Heat oil at medium setting in frying pan.

Chop onion into small pieces.

Peel garlic cloves and press into oil. Add onion and sauté until soft.

Step 6

Add broccoli flowerets and cook until bright green.

Step 7

Stir in red pepper and kale. Cover and cook until soft.

Salt to taste.

      Here is the definition of a devoted follower...I don't like veggies but since you wrote this, here I am. :) Great hub for those who eat that sort of thing. LOL

      i made it last week and i LLLOOOVVVEEEDDD it! It is a wonderful lunch/dinner. I never had kale before this and now it's going to replace romaine lettuce for me! thanks for the receipe!

      I am so glad to hear that, Lucasmom! Any time we can get veggies into our kids, I figure that's big points for Mom, lol! I also tried a wonderful salad recipe using kale instead of lettuce. Because kale is tougher than lettuce, you marinate it in the dressing. You have to massage the dressing into the kale with your hands. Then you add lots of goodies - it was another hit! Then, I tried making kale chips in my dehydrator - no good. Only I liked it.... live and learn. Thanks for visiting!
