Splendid California Veggies
This colorful vegetable dish is full of flavor and nutrition.
- 2 tbs olive oil
- 2 cloves garlic
- 1/4 red onion
- 3 cups broccoli
- 1 medium red pepper
- 6 leaves red kale
Using point of knife, remove stems from kale leaves.
Compress leaves and cut into small pieces. Set aside.
Rinse broccoli and cut into flowerets.
Rinse and remove seeds from red pepper. Slice.
Heat oil at medium setting in frying pan.
Chop onion into small pieces.
Peel garlic cloves and press into oil. Add onion and sauté until soft.
Add broccoli flowerets and cook until bright green.
Stir in red pepper and kale. Cover and cook until soft.
Salt to taste.
