Stuffed Peppers!

Yields: 2 half peppers per person


  • 8 bell peppers, cut in half width wise
  • 1 lb hamburger
  • 2 bags boil in bag rice
  • dash ground pepper
  • dash paprika
  • dash season salt
  • 1/4 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • dash red pepper flakes
  • 1 cup corn, frozen, fresh, canned
  • 1 can tomato sauce, your choice
  • shredded mozzarella cheese and sour cream, both optional
  1. Preheat oven to 375. Spray 2 casserole dishes. Heat a large skillet on medium-high heat. Add the hamburger and all the seasoning to the skillet... make sure to break up the hamburger into pieces. After browning add the corn and cooking for about 5 minutes. After that time add the sauce and rice (if done) and set aside. Cut the peppers and remove seeds and membranes. Place in the casserole dishes and fill with rice mixture. Place in oven and cook about 30 minutes. Top with mozzarella cheese and sour cream (optional).
