Summer Apple Salad recipe
This is a quick and easy salad recipe. This isn't a really low calorie recipe, but it is really good. Make it ahead, so you can refrigerate it for awhile. It tastes better cold.
Makes 6 servings.
3 medium apples
1 pound 4 ounce can pineapple chunks
2 cups sliced celery
1/2 pound cheddar cheese
3/4 cup slivered toasted almonds
1/2 cup sour cream
1/2 cup mayonnaise
Core the apples but do not peel them. Slice them thinly.
Drain the pineapple chunks.
Cut the cheese into small cubes
Mix together celery, apples, cheese and nuts.
Mix sour cream and mayonnaise, then add to the apple mix.
Toss to coat evenly
Serve on salad greens.
