Super Easy Homemade Buttermilk Pancakes

Nothing says love to my family like waking up to the smell of warm pancakes with syrup! But weekday mornings are usually hectic in my house with everyone having to be out the door by 7:30. So the weekend is when I like to prepare something other than the standard egg and bacon or bagel breakfast we normally make during the week.
Southern Living Recipe for Buttermilk Pancakes
My very first cookbook my mom gave to me was from Southern Living. This is where I got the basic recipe for buttermilk pancakes and tweaked it a little. Every time I make these, my family goes crazy. They are super simple and taste way better than any box mix!
- 2 cups flour
- 2 cups buttermilk
- 2 eggs
- 2 tablespoons sugar
- 4 tablespoons oil
- pinch of salt (optional)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 4 tablespoons ground flax (optional to make them healthy with Omega 3--nobody will taste the difference)
Wisk together and pour in 1/4 cup servings onto pan.
For best results cook on an electric griddle at 350 degrees. Makes enough for 5- 6 servings.
