Sweet Potato Pie
2 cups of mashed sweet
potatoes
1/4 pound of softened butter
2 eggs, separated
1/4 cup packed brown sugar
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup of canned evaporated milk
1/4 cup sugar
Dash salt
1 -9 inch unbaked pie crust
Preheat your oven to 400°
Combine sweet potatoes, butter, egg yolks, brown sugar, salt, spices and milk in a mixing bowl. Mix together.
In a separate bowl, beat egg whites until peaks form then add 1/4-cup of sugar and fold into the sweet potato mixture.
Pour into a pie shell and bake at 400 degrees F for only 10 minutes. Then reduce heat and bake at 350 degrees F for half hour.
