Sweet Potato side dish recipes
CANDIED SWEET POTATOES
This classic recipe is simple to prepare, using canned potatoes. and can be prepared in the oven or on the stovetop.
INGREDIENTS
1/2 cup orange juice
| 1/4 cup brown sugar

1 tablespoon melted butter
| 1/2 tablespoon cornstarch
|
1/4 cup while sugar
| 16 ounce can sweet potatoes
|
Drain and quarter the sweet potatoes.
Mix rest of ingredients.
Use cooking spray on small casserole, add potatoes and pour juice mixture over them. Bake at 325 for about one hour.
For stovetop preparation, place potatoes and mix in saucepan, mix well and heat.
This recipe for pan roasted potatoes can also be made with white potatoes.
PAN ROASTED SWEET POTATOES
8 sweet potatoes
| parsley
|
1 stick butter
| |
Boil cut sweet potatoes for 10 minutes, drain.
Melt butter and mix with sweet potatoes, sprinkle on parsley.
Arrange in roasting pan or baking dish.
Bake at 400 degrees, turning often, for about 40 minutes or until the potatoes are tender and browned.
I must admit that this next recipe is not one I have ever tried. A marshmallow center seems more appropriate to a desert. But I collect recipes and it seems interesting, so if you try it tell me what you think.
INGREDIENTS
6 medium sweet potatoes
| 1 cup chopped pecans or walnuts

1/2 cup margarine or butter
| 12 large marshmallows
|
1 cup brown sugar
| 2 cups crushed corn flakes
|
DIRECTIONS
Cook, peel and mash the sweet potatoes.
Mix the potatoes with softened butter,sugar and nuts.
Form a ball around one marshmallow and roll in the crushed cereal.
Bake in 350 degree oven for 15 minutes or until the marshmallow is starting to melt.
