My mom in law, Caroline Walker, had some terrific recipes she shared with me over the years and I've come to think of them as Lazy Gourmet recipes -- easy and quick to prepare, and incredibly delicious.
This holiday season I want to introduce you to a couple. This first one is an elegant soup, ideal for a holiday lunch or dinner where you don't have a lot of time for hors d'oevres, but want to serve something a teeny bit special.
Mushroom Asparagus Cream Soup
1 can mushroom soup
1 can asparagus soup
3/4 can evaporated milk
3/4 can water
Pour ingredients into food blender and puree. Pour into pan and heat. Serve with garlic croutons.* Yummy!
*Garlic croutons: old French bread cut in cubes, pour 1/4 cup olive oil in toaster oven pan, mince fresh garlic into the oil, heat, toast the cubes in the garlicky oil til crunchy, brown and toasty.
