Taco Casserole

Updated on October 6, 2015
5 stars from 2 ratings of Taco Casserole

This is a quick, easy casserole to put together and pop in the oven when you get home. When we get home late and don't feel like eating takeout, it is the perfect dish as it doesn't take long to make. Wait to mix the chips in until you are ready to put it in the oven. They will get soggy if you let them sit in the mixture too long.

Serve with small dishes of chopped green onions, diced tomatoes, guacamole, sour cream and shredded cheese to make it more festive and tasty. Serve a zesty salsa with it. Serve with a tossed salad and you will have a delicious, tasty meal.

I will have to locate the recipe first. I moved and for some reason, it is not in my recipe box. I may have to get my sister to send it to me. It also might be in the still packed box with my cookbooks.

Please do. I've made tamale pie using cornmeal mush before, but spoonbread sounds interesting.

MizBejabbers, Hahaha, I had to leave out the olives also. I have two that won't eat them. This is really good without them too. Someday, I will put the recipe for Spoonbread Tamale Pie on here. I have to double the recipe, hoping to have leftovers. I never do though. They will gobble it up.

Oh, that looks good. We love tacos. I will have to try it, but I'll have to leave out the olives or Mr. B. won't touch it.

This is what I have been looking for! I always have left over broken tortilla chips at the bottom of the bag and I don't want to throw them away. I made a casserole using them one time, but now I can't find the recipe. Now I have a new one! I'm so happy! :) Thank you Becky! Voting up, useful and I would like to share this on my "Around theWorld withRecipes" blog if that is ok with you! :)
