Yummy Quick Family Recipes Pt 1
I know the families are really busy now days (ours included) so I have created some tried and proven quick recipes for our hungry crew that is sure to draw repeated customers to Ma or Pa's Cafe.
White Bean Frito Chili Pie
You will need: 1pnd of ground beef
3 to 4 cans of Great Northern Beans
1 pouch of white chili seasoning ( the kind used for chicken chili).
4 to 6 oz of Velveta Cheese (depends on how much you like cheese) You will need a little milk to liquify cheese too.
1 Bag of Fritos
Brown hamburger and drain. Mix in white chili season with small amount of water and simmer. Sprinkle lightly with salt and pepper.
In a pot empty cans of beans. Melt cheese in microwave and pour over beans. Add hamburger mixture. Simmer until hot and mixed well. Line a bowl with fritos and pour chili mixture. Optional: It is very good to add shredded cheese on top.
Note: This is a different twist to the traditional chili pie, it's zippy and less greasy. Enjoy!
Fajita Enchilada's
You will need: 1 whole chicken ( you can substitute with leg fryers if their cheaper) or 1 large package of fajita sliced beef ( you also can use philly steak).
You can double recipe and make chicken and beef enchilada's.
1 med onion
1 lag green pepper
1 pkg of enchilada-size tortilla's
1 pkg of beef or chicken fajita seasoning
1 block of white mexican melting cheese ( make sure its the melting kind) Need milk for melting.
1 pkg of shredded cheese
Boil chicken or stir fry beef. Make sure the meats in small pieces.Simmer in fajita seasoning and water.
Saute the onions and green peppers in butter.
Melt the cheese, add some milk to smooth like nacho cheese.
Preheat oven to 375 degrees
Warm tortillas in the microwave. Put a layer of saute mixture, then meat ( don't over fill), then put a TBS of cheese mixture over the previous. Roll up like enchiladas in a casserole pan or two. Pour over remaining cheese mixture over enchiladas then cover with shredded cheese. Bake until cheese is bubbly and melted good. Optional: You can also add hot spices too, we like ours mild.
Serving suggestion bonus: I have also done this exact recipe and made flautas ( kinda like taquitoes) You just bake them with no cheese on the outside until crispy, then dip them in cheese dip or sourcream. Yum Yum:.)
Quick Yummy Chicken Alfredo Pizza
You will need:
A package of 2 prebaked pizza crusts.
A jar of alfredo sauce
4 cups of diced cooked chicken
1 large package of mozzerella cheese
Crumbled bacon and diced tomatoes optional.
Spread sauce on both pizza crust, spead out chicken evenly then add cheese and garnish. Bake until bubbly and evenly melted. This is very good and quick. My kids love it!!!!
Cheesy Broccoli Creamy Soup
1 lg pkg of chopped broccoli
1 1/2 pint of half and half milk
1 pint of cream
3/4 of a block of Velveeta Cheese
1 8 oz box of cream cheese
Add milk as needed
May need corn starch to thicken
Steam broccoli first in low water. Strain broccoli and add all the above ingredients. Broccoli can be steamed in chicken broth and you can keep broth if not too much. Simmer slowly until boiling and melted creamy. Add salt and pepper to taste. You can also sprinkle shredded cheese on top. Great for a cold night.
