Tender Coconut Pudding
This pudding has brought accolades from friends and family.It's my husband favourite and his speciality.It is a sure success in a ny occassion. Be careful that the tender coconut is really tender (has a pulpy coconut inside).
Tender coconut pulp - 2 Nos
Milk – ½ litre
Gelatin - 2 tsp
Egg – 2 Nos
Sugar – 10 -12 tbsp
Vanilla essence – 1 tsp
Almonds (chopped) - for garnishing
Cashew nuts (chopped) - for garnishing
Double boil the milk. Add sugar and mix. Slowly add beaten eggs and boil for few minutes. Dissolve gelatin in 1/4 cup of hot water. Mix it well to the above mixture. Remove from flame and allow it to cool. Add the tender coconut pulp and essence and blend in a mixture. Pour in pudding cups and refrigerate. Garnish with chopped almonds and cashew nuts. Serve and enjoy!
