Restaurant Noma reinventing itself

New Nordic Cuisine

Off the beaten track, Noma is on the harbour’s far side and its dish that has made it most famous may be made of malt flour, beer and nuts but looks like soil. At the moment, it is one of the world’s most famous restaurants with the New Nordic cuisine it serves pioneered by Rene Redzepi. Once you are able to book a table Noma, which is next to impossible, you can expect Faroe Islands langoustines, seaweed and salmon from Iceland and from Greenland, berries and musk ox.

The Local Plant and Herbs Movement

In the culinary world, Noma is known best for being the pioneer of the movement of foraging where chefs use ingredients that are hyper-local like plants and herbs.

With a specific enthusiasm that seems to be driven passionately, Noma chefs celebrate the cold North Atlantic cuisine. Located in Christianshavn in an antique warehouse that is stone-sided, there are imports from the Faroe Islands, Iceland and Greenland.

Chef Rene Redzepi

Run by Rene Redzepi, the chef, Noma is a restaurant with a rating of 2 Michelin stars in Copenhagen,Denmark. Chef Redzepi makes a concoction of platters where fish is salted, smoked, pickled, grilled or poached according to old traditions that are Nordic. Next, these are served in methods that are sometimes more decorated elaborately and by far flamboyant visually tan the Spartan white décor where they are brought. Come here for foamy wasabi flavored ice cream, halibut, lobster and crayfish. You will also find almost every one of the creatures thriving in Nordic Europe’s foamy waters. Within the stripped down décor of this location, you can expect to spot Northern Europe celebrities including the Danish Royal Family members.

Nordisk Mad

Two words that are Danish create the portmanteau of the name which are the Nordic ‘nordisk’ and food ‘mad’. Known for its interpretation of cuisine which is Nordic, the restaurant has been ranked by Restaurant as the Best Restaurant in the World. On the 2013 list of one hundred of the world’s best restaurants by Elite Traveler, it ranks ninth.

An Old Warehouse


The restaurant is found on the Christianshavn neighborhood waterfront in an old warehouse in Copenhagen’s central district. Situated by the Greenlandic Trading Square, the building was a center for trade for two hundred years and from Finnmark, Iceland’s Faroe Islands and Greenland in particular. Skins, whale oil, salted herring and dry fish are among the stored warehouse food before being sold to markets in Europe.

In the year two thousand four, the warehouse was converted to a center for North Atlantic culture and art called North Atlantic House. At the same time, Noma was opened by Claus Meyer and Redzepi. Space Copenhagen designed the interior of the restaurant.

Formerly, founder and owner Rene Redzepi worked for restaurants including Le Jardin des Sens, Kong Hans Kaelder, elBulli and The French Laundry. Matt Orlanda is the Chef de cuisine who, while working at The Fat Duck, met Redzepi. Mads Kleppe is the Norwegian sommelier.

The Noma cuisine is Scandinavian/Nordic. The founders of the restaurant, Claus Meyer and Rene Redzepi tried redefining this cuisine which is Nordic. The Noma cuisine can be thought of as a Nordic food representation than the classical food of the Nords itself, according to the book Noma by Meyere. Dishes that are famous include The Hen and the Egg. Noma cuisine embodies many wild culture principles.

Rankings and Awards

A relative newbie in 2010, Noma stole the crown startingly that El Bulli had been holding for 4 years consecutive. Soon after previous 1st and 2nd place chefs, the announcement that they would be closing their restaurants temporarily which include Heston Blumenthal and Ferran Adria. At that time, Noma was considered as the new movement head to spread the cuisine movement called New Nordic. A year later, El Bulli was going to be closing permanently and had withdrawn from the competition and easily, Noma was named for the 2nd straight year Best Restaurant. A panel of worldwide food lovers, restaurateurs, chefs and journalists selected Noma for this title. Without having earned Michelin Star number three, the restaurant continued its being dominant. The Noma award was yet again won by Rene Redzepi in the year two thousand twelve being praised as the New Nordic movement standard bearer by Restaurant. In the world, Noma in 2013 was voted second best, having lost 1st place to Catalonia, Spain’s El Celler de Can Roca.
