Traditional family Noddie Recipe
Noddies are also similarly or best known as Vanilla muffins. I have made this recipe countless times and it still brings the same taste of goodness it had back when I was little (licking out the bowl!).

Ingredients
- 2 Cups Sugar
- 1/2 block Butter
- 1 Egg
- 2tsp Vanilla essence
- 1 Cup ( 240ml) Milk
- 2 Cups Self-raising flour
Method
- Put the sugar and butter into a bowl and mix together. Add the egg, vanilla essence and milk and mix altogether. Then add the flour and mix thoroughly until a smooth batter is formed. Pour batter in a muffin tray equally and bake at 180°c.
- What I also like to add as a topping is orange icing. So in a bowl you could throw in 2Tbsp Icing sugar and take an orange and squeeze about 2tsp of orange juice into the bowl and then mix the two together until it forms a thick paste. Coat the top of the Vanilla muffin with the orange icing and then let it set before serving.
- You can also add orange zest into the batter for a citrus flavour. I do this for added flavour and it really makes a good combination. However, if you do put in zest, leave the orange icing as suggested above to avoid it being too overpowering.
